  • Smoked Haddock: 2 fillets
  • Penne Pasta: 1 cup (uncooked)
  • Leeks: 2, sliced
  • Spinach: A handful
  • Peas: 1/2 cup
  • Garlic: 2 cloves, minced
  • Vegetable Bouillon: 1 cube (or 1 teaspoon powder)
  • Cheddar Cheese: 1/4 cup, grated
  • Coconut Milk: 1/2 cup
  • Dill
  • Chives
  • Salt
  • Black Pepper

Instructions

Here's your step-by-step guide to making Bozu's Smoked Haddock & Creamed Leek Penne Pasta. 

Cook Pasta 

  • Fill a large pot with water and bring it to a rolling boil. 
  • Add a generous pinch of salt to the water (it should taste like the sea!). 
  • Add the penne pasta and cook for 8-10 minutes, or until al dente (still firm to the bite).

Leeks and Garlic

  • While the pasta is cooking, grab another pan and heat a drizzle of oil over medium heat. 
  • Add the sliced leeks and cook them gently for about 5 minutes until they're soft and translucent. 
  • Stir in the minced garlic and cook for another minute until fragrant.

Make it Creamy

  • Now, crumble in that veggie bouillon cube (or sprinkle in the powder) and pour in the coconut milk.

  • Gently fold the smoked haddock fillets into the creamy sauce. 
  • Let them cook for about 5 minutes, or until they flake easily with a fork.
