Recipe of Pulled Chicken & Sweet Potato Hash with Poached Egg

Before starting cooking, gather these ingredients first. 

  • 1/2 cup cooked pulled chicken (from one chicken thigh)
  • 1 cup cooked sweet potato, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 large egg

Optional Flavour Boosters

  • 1/4 teaspoon jerk seasoning or Cajun spice mix
  • Chopped green onions
  • Fresh herbs (parsley, cilantro, etc.)
  • Plain yoghourt

Cook the Sweet Potatoes

  • Warm a skillet (cast iron is awesome if you have it) over medium heat.
  • Drizzle in the olive oil and swirl it around the pan.
  • Add your diced, cooked sweet potatoes. 
  • Let them sizzle for a few minutes to get a bit crispy and golden. 
  • Season generously with salt and pepper.

Add the Chicken & Spices 

  • Toss your pulled chicken into the pan with the sweet potatoes. Give it a good stir to warm the chicken.
  • If you want a kick, sprinkle in some jerk seasoning or Cajun spice. Go easy at first, you always add more later.

Poach the Egg
